Baking pitas is a winter tradition for me and The Pixie. This is the first year that The Butterfly has been able to participate, though still very limited.
Once the dough is ready, it is a lot of rolling and swapping of full and empty trays.
You have to keep the oven very hot and bake the pitas on a cast iron griddle or skillet. It can be a very tiring process but it is also fun and results are very tasty.
It is hard to stick to the self-imposed limit of two per day
